The short version of using waterproof Ebay DS18B20 sensors with RJ45 (cat 6) connectors is that if you take your time you can crimp the connector directly onto the 1 meter cable that comes with the sensors. An acceptable wiring scheme is yellow wire to pin 2, red wire to pin 4, black wire to pin 8. Now you can make a modular temperature sensor network using ethernet cables, splitters, and couplers. You will still need a resistor between yellow and red (DQ and Vdd) back at the arduino.
