In level 1 you should see all received RF packets in the HS log.

Note:
X10 security and Visonic motion sensors only transmit an alert once and than for a period nothing.

true, I'm in disarmed mode, and there is no trace of something like
"motion sensor X went on alert at xx:xx"

They are not overwritten in the panel?
what I was looking for, was a trace in the log with what happened...

There is no selection box for this.
See chapter 10.2 in the RFXCOM User Guide for all available options.

Do you always need to have the sensor alerts logged in the HS log or only when the panel is armed? And why would you need to log this kind of messages?
The sensor alerts are logged in the Alarm Panel Messages if the system is armed.

Is there an option (that I missed) in the RFXCOM plugin in order to enable sensor alerts logged into Homeseer's logs?

I had that with ACRF2 and it's very useful!
