I’m going to be acquiring a latest generation Fire 7”. What screen resolution works best for creating a screen in HSTouch Designer?

Set the "stretch to fit" attribute (either within the project itself, or on the tablet settings). Then just make sure that your screen ratio (width to height for landscape orientation) is the same between your project and the actual screen.
All of my tablets have as screen ratio of 1.6 to 1, so I can use one project for all of them, even though their actual resolutions are different. I then use a large enough resolution in the designer to get things done.
