If you plan to custom design your own dashboards then the pro with HStouch included makes sense otherwise go with the regular. Are you going to load it on your own hardware or buy a bundle and then you need to figure-out Windows or Linux? I choose to get the bundle Linux with Pro for simplicity. For our summer cottage, I'll build and using regular.

When I made the transition, I kept the Vera box online. You can communicate between HS and Vera using http commands, so it is relatively easy to have both running. I would just move part of the network over to Homeseer as I had the time, until most was converted over.
I am still running that Vera (Vera3) box. It still manages my two door locks (okay, I am lazy, and do not want to break something that is currently working). But with everything else removed, the Vera is very stable now. Again, http commands are used by Vera to inform HS that the door has been unlocked or locked. And HS will just http to run a scene on Vera if it wants a door to lock immediately.
