I'm not sure how I'm meant to turn lights off in an event, for some reason it refuses to accept a brightness of 0 (but is happy with a brightness of 1) -

Yes, it has been that way in the plugin since the beginning. You only can switch the light off on the on/off device (eventually with a transition time as set in the configuration page). It is the way the Philips API works, it does not accept the brightness set to 0.
How I do this is to set the brighness to 1 with a transition of say 600 (60 secs) and add a wait to the event for 1 minute and add the action to switch the light off.
