I tried to turn up logging, but I don't see any messages for the Nest plugin. I am in trial mode right now. Would like to see when Mode, Status, temperature changes, Home/Away changes, etc.

if you set the log level to Debug you will see all the json data sent and received, but I guess that is not what you want.
the plug-in does not log device changes as it actually update all devices everytime it receives some new data.
one possible workaround is to create some events to log what you want when a specific device has a value that changed:
