Mode is what you are looking for.

"Alexa, tell HomeSeer to set the Thermostat Mode to Heat."
"Alexa, tell HomeSeer to set the Thermostat Mode to Cool."
"Alexa, tell HomeSeer to set the Thermostat Mode to Auto."

I changed Idle to Off for ease of use:

"Alexa, tell HomeSeer to set the Thermostat Mode to Off."

None of the above voice commands work. I keep getting a response of "...that command was not recognized." I even tried "Alexa, run Homeseer" and then "Set the Thermostat...." Still no luck.

My trial of the Plugin runs out in about three weeks. I really want to make sure I can get it to work before I pay for it.

In your screenshot above, your thermostat is called "thermostat root device" so you need to either rename it by clicking on it, or you can say "Alexa, set the thermostat root node mode to cool"

Renamed "Thermostat root device" to "Thermostat"
Voice command "Alexa, set thermostat mode to cool" results in a response: "Setting thermostat heat to 34"
Voice command "Alexa, set thermostat mode to Idle" results in the same response: "Setting thermostat heat to 34"

FYI - I did indeed re-run the "Discover Devices" on the Alexa app on my phone before trying the above commands. I'm stumped.

Mason, thanks for the response. However,

"Alexa, tell homeseer to set the thermostat mode to idle"
"Alexa, tell homeseer to set the thermostat mode to Cool"
"Alexa, tell homeseer to set the thermostat to 75 degrees"

All produce the response "I'm sorry that command was not recognized"
I am sure I must have something misconfigured someplace. I just can't figure out where.

Try a status request.

"Alexa, tell HomeSeer to get the status of the Thermostat mode."

Received same response to that command: "I'm sorry, that command was not recognized."

There is definitely something up with your Alexa/Homeseer configuration. Can you post a screenshot of your Alexa setup? For example, here's mine:
