Is it possible to create an event, or script, that would increase, or decrease, the set point by one or two degrees?

An event will only set it to a specific setpoint. HSTouch allows increasing or decreasing by x degrees. A script would need to read the current value, then add/subtract by x as needed. Blade's thermostat plugin might have the feature you need.
